Minnie Mouse Cupcakes!

Minnie Mouse Cupcakes!
So it's been a while! Not because I haven't been baking, but because out camera is broken!!! We are looking to get it fixed but it's quite expensive, so will have to wait a little longer. I have asked each person that I have made cakes for to take loads of pictures and then to send them to me so I can post them on here. So here is the first of them :-)!
Minnie Mouse Cupcakes!!!


They are chocolate Cupcakes with a marshmallow filling and Vanilla frosting. Now thinking in retrospect I should have made an Italian meringue frosting as it doesn't harden the way normal buttercream does. They wanted to pick up the cupcakes the day before, so they were bound to have hardened a lot by the time they ate them. I'm sure they still tasted fine, but just not as fresh :-). But like I always say.. I am still learning :-)!!!

  1. In my opinion, leave the Buttercream as is. I don't know what this Italian meringue tastes like but there's nothing like a big gob of buttercream! It's the best part of any cake, really.

  2. Haha, yes it definitely is :-)!!! I think I just prefer it when it's fresh :-)... Italian meringue tastes great as well! I've only made it 2 times and have been lucky enough to be successful. it can be a bit tricky as a thermometer is used (and I do not have one). I personally think it's not as sweet, which there are many who prefer. But luckily there are many options for different things :-)! Italian meringue doesn't harden as much and as quick as buttercream, making them feel a lot fresher if the cupcakes will have to stand for longer then 12 hours. but you are right.... mmmmmm... buttercream..... :-)
